I made these Chocolate Drizzled Mango Yogurt Pops a couple weeks ago after finding mangos for 3 for $1 at the grocery store. When produce is that cheap I can’t pass it up. Usually my luck with picking out a sweet, juicy mango sucks. I tend to end up with the dry, piney tasting ones, but luck was on my side this time. The mangos were perfect and I knew I had to make a recipe or two using them.
Yogurt pops were my first choice because I live off of them in the summer. Last Saturday my long run was extra hot and humid and left me overheated and dehydrated. As soon as I got home I headed straight for the freezer and grabbed one of the mango yogurt pops. Oh my goodness did it taste good! Cold, sweet and creamy, just what I needed to help me cool down. If you’re ok with a little dark chocolate for breakfast, then the yogurt pops are perfectly healthy and acceptable. Made with fresh mango, Greek yogurt, honey and vanilla, they’re basically like having a frozen smoothie.
Not only do I love to keep these Chocolate Drizzled Mango Yogurt Pops on hand after a hot sticky run, but I also like to have them during the week when my nightly dessert craving hits. The creaminess of the yogurt pop, paired with the dark chocolate makes me feel like I’m having a real treat and keeps me from reaching for the ice cream.
