Any day that starts with a cupcake is a good day!
Cupcakes are great little individual desserts. They are perfectly portioned and pack just as much flavor in them as a cake does. I really like making small batches of cupcakes because then they don’t sit around the kitchen staring at me and taunting me to eat them all, which I may or may not have done in the past. I mean seriously, it takes a strong person to make a dozen cupcakes and only eat one, I am not that strong person!
When I decided to make these chocolate yogurt cupcakes I started looking around at some of my favorite food blogs for cupcake recipes for two people. I fell upon this chocolate cupcake recipe on The Comfort of Cooking’s website. I thought it would be a great recipe to use for inspiration for my chocolate yogurt cupcakes with strawberry frosting.
Some of the changes I made to the recipe were adding whole wheat pastry flour, a little espresso powder to enhance the chocolate flavor, and replacing the oil with my favorite fat substitute plain non fat Greek yogurt. The strawberry frosting is a creation of my own and WOW was it delicious! I’m a lover of frosting, but it better be good frosting. I can’t stand that waxy frosting on grocery store cupcakes that coats your mouth and leaves you feeling sick. This strawberry frosting that I made is NOT that! To make the frosting I used a combination of butter, low fat cream cheese, Greek yogurt, and powdered sugar. I pulverized a 1/4 cup of freeze dried strawberries in my high speed blender and added the powder to the mixture. If you’ve never used freeze dried fruit, you must! The fruit has an intense flavor, better than some extracts, and the best part is it’s all natural. It also gives the frosting a beautiful pink color. The frosting isn’t quite as stiff as a buttercream, but I was still able to pipe it onto the cupcakes. If you let the frosting chill in the fridge for an hour it would probably be even better for piping, I however didn’t have the patience.
These chocolate yogurt cupcakes with strawberry frosting are the perfect after dinner treat for you and your Valentine and you won’t have 10 more of them calling to you and begging to be eaten. If you don’t have a Valentine, then lucky you, you get to eat both of them!
