I love tiny food!
What’s not to love about little hand held bites of food? Okay, okay, I suppose if you are a guy it might not be the most appealing thing, but come on they are so cute and they fit in your mouth in one bite!
Over the weekend I had a craving for some salmon salad and also happened to have some small on the vine tomatoes that needed to be used up. I thought it would be fun to stuff the salmon salad inside for a quick light lunch. I knew my husband and I would be going out for dinner that night so I wanted to keep lunch simple and healthy.
To make the salmon salad you’ll need only a short list of ingredients, many of which you probably already have. A can of salmon, plain nonfat Greek yogurt, dijon mustard, stone ground mustard, celery, a dill pickle onion, dill (fresh or dried), paprika,salt, and pepper. Combine the salmon, celery, onion, and dill pickle in a mixing bowl. Whisk together the rest of your ingredients, which make up the dressing for the salad in a small bowl. Pour the dressing over the salmon salad and mix it all together until combined. Whala! Healthy mayo free salmon salad!
Well, I could have just stopped there and stuck the salad on a piece of bread or on top of a mixed green salad, but me being me just had to give this salad a little flare and cuteness. I hollowed out my tomatoes simply by cutting off the top, running a knife around the inside, and twisting out the middle. I then scooped a couple spoonfuls of the salmon into each tomato. I wish I could say there was more to it than that, but that’s it folks! The next step is easy…EAT! Serve theses cuties up at your next party, bridal shower, or baby shower. I’m thinking they would be a perfect accompaniment to my Mother’s Day brunch I’m planning! What is your favorite way to eat your salmon, tuna, or chicken salad?
