I made us Mexican food today friends and that is always worth getting excited about! Not only is it Mexican food, but it’s made in one skillet. Yay for less dishes to clean! So what is this one pan Mexican wonder of a meal? Skillet Green Chile Chicken Chilaquiles!
Sorry for all the excitement about this recipe, but it was my first time making chilaquiles and I couldn’t have been more happy with how delicious they turned out. I’ve eaten the dish a couple times, but never thought to make my own. Well, after discovering how easy it is to make these Green Chile Chicken Chilaquiles, they are going to be on the menu at our house a lot more often.
If you’ve never had chilaquiles it’s almost like loaded nachos that you drown in either a red or green chile sauce…did I get your attention? Often times the dish is served for breakfast or brunch with fried or scrambled eggs on top. While I didn’t include the eggs on mine, you absolutely could. Topping a dish off with an egg can only make it better in my opinion. My version of chilaquiles includes a jar of green chile salsa which may not be the authentic way to make it, but saves a lot of time. To make the meal more wholesome and filling I used leftover shredded chicken and black beans. The toppings for chilaquiles are up to you, whatever your favorites are. Mine include queso fresco, tomatoes, cilantro, more green chile salsa and plain Greek yogurt. I don’t usually have sour cream in my house otherwise I would have used that.
