Strawberry Coconut Baked Donuts

Happy Donut Friday everyone! Fridays and the weekends are meant for donuts and that’s exactly what I’m baking up in my kitchen.

Yes I’m baking these lovely strawberry coconut donuts not frying them, that way I can have more than one and not feel bad about it.

I love baked donuts as you may have guessed from my Lemon Baked Donut Holes with Lemon Sugar that I shared the recipe for last week. Well I’m continuing on with my donut kick and having fun with fresh spring flavors even though it isn’t spring yet, but I like to pretend. Today strawberries and coconut are on the menu, what could be more sweet and tropical tasting!

We are finally having a warm weekend here in Colorado so I thought these flavors would be the perfect way to celebrate. The idea for these donuts was inspired by Shugary Sweets Vanilla Bean Baked Donuts with Strawberry Frosting.  I love the combination of vanilla and strawberries, but I thought I would take it a step further and use the flavors of coconut in mine.

There are three types of coconut products in and on these donuts. I used light coconut milk, coconut extract, and sweetened shredded coconut for decorating the top. You can definitely taste the coconut in these little bites of heaven, but they don’t overshadow the other wonderful flavor which is the strawberries.

The donut has fresh chopped strawberries in the batter and freeze dried strawberries that have been pulverized into a powder in the frosting. Not only do the strawberries add wonderful flavor, but they give the donut a beautiful color. These strawberry coconut baked donuts make a decadent breakfast, a fun snack, and a delicious dessert (a scoop of vanilla ice cream with one would be amazing). So celebrate the fact that the weekend is almost here and that spring is on it’s way and bake some of these strawberry coconut baked donuts!

Strawberry Coconut Baked Donuts

Sweet strawberry coconut baked donuts are the perfect breakfast or treat to start your weekend with!


    For the Donuts
  • 1/2 cup whole wheat pastry flour
  • 1/2 cup all purpose flour
  • 5 T. granulated sugar
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. kosher salt
  • 1 t. vanilla extract
  • 1/2 t. coconut extract
  • 1 egg
  • 1/4 cup + 2 T. light coconut milk
  • 1 T. plain non fat Greek yogurt
  • 1/2 cup strawberries, diced
  • For the Frosting
  • 2 T. light coconut milk
  • 2 T. skim milk
  • 1/2 t. vanilla extract
  • 1/2 t. coconut extract
  • 1/2 cup freeze dried strawberries
  • 1 1/4 cups powdered sugar
  • Shredded sweetened coconut (optional)


  1. Preheat oven to 325 degrees.
  2. Spray a donut pan liberally with cooking spray and set aside.
  3. In a large bowl combine the flour, sugar, baking powder, baking soda, and salt.
  4. In a smaller bowl whisk together the coconut milk, yogurt, egg, and extracts.
  5. Pour the wet ingredients into the dry ingredients and stir together just until combined.
  6. Fold in the diced strawberries.
  7. Pour the batter into a large ziploc bag and cut the tip of the bag off.
  8. Squeeze the batter into the donut pan until each mold is about half full.
  9. Bake the donuts for 12-14 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove the donuts from the pan and cool on a wire rack.
  11. While the donuts are cooling prepare the frosting.
  12. Pulverize the 1/2 cup of freeze dried strawberries in a blender until they turn into a powder.
  13. In a medium sized bowl add the coconut milk, skim milk, extracts, strawberry powder, and powdered sugar.
  14. Whisk all of the ingredients together until they are smooth.
  15. Dunk the cooled donuts into the strawberry frosting and place them back on the wire rack.
  16. Sprinkle on the shredded coconut.
  17. The donuts are best eaten the same day, but you can store them in an airtight container for a day or two.


If you don't have coconut milk you can use whatever milk you have on hand, the coconut flavor may not be as prevalent.

The frosting recipe makes quite a bit so you should have extra.
