Whether you go head over heels for all things Valentine’s Day or could care less and think it’s an excuse for card makers, flower shops, and chocolate companies to make a killing, there is still one thing to celebrate on this day of love and that’s these Berries and Cream Meringue Nests!
Valentine’s Day is usually pretty low key at our house. Normally I make my husband a nice dinner will all of his favorites. This will include something with steak, cheese, pasta, and of course dessert! No kale, quinoa or other healthy items will be appearing on his plate. That’s okay though, it’s only a few times a year I cook all of his favorites, he is my Valentine after all and he deserves a break from all my healthy cooking every now and then.
Dessert is the one thing we both have a weakness for. I don’t make us a special dessert very often, but when I do I go all out. This Valentine’s Day along with my Strawberry Chocolate Frozen Yogurt Pies, I will also be making us these Berries and Cream Meringue Nests. These perfectly sized individual nests are filled with an amazing vanilla cream and topped with fresh, ripe, juicy berries. Finish them off with some dark chocolate shavings and you have an elegant and fabulous dessert!
