The local Colorado produce is finally filling the stores and farmers’ markets. We get ours a little bit later than other areas, but I plan to enjoy it all month long. This is the month I look forward to every year! Currently I have a fridge full of Colorado peaches, corn, a honeydew, zucchini from my own garden and a bag full of green beans. After grabbing a few handfuls of delicious green beans at the farmers’ market a few weeks ago, I’ve been going back for more every weekend. My current favorite way to eat them is in this Green Bean, Radish and Bacon Salad with Creamy Feta Dressing!
I know it’s Friday and salads are better suited for Mondays, but this one is special. Between all the crisp veggies, salty bacon and the amazing creamy feta dressing, it’s worthy of a Friday post. This salad needs to be served as a side dish at your weekend barbecue. I realize that some people are already pretending it’s fall and starting in on pumpkin and apples…I am not one of those people. We are still averaging 90 degrees on most days and I don’t even want to think about putting on a sweatshirt! I’m all about barbecues, grilling all the things, summer produce and ice cream. Let’s leave the pumpkins out of it for another couple months.
