How many of you are coffee or espresso fans? I’m right up there with slightly obsessed with the stuff. If you follow me on Instagram you’ve probably seen some of my cappuccino  pictures. I absolutely adore them and the foam is probably my favorite part, the more foam the better! Every Saturday and Sunday after my long runs I treat myself to a cappuccino. I’ve been trying to go to different coffee shops all around Denver and I’ve found a couple of really cute places that serve up some amazing tasting espresso. Along with drinking espresso I also like to add it to things I bake, like these Hazelnut Coffee Muffins Stuffed with Nutella.

Not only are these muffins flavored with delicious espresso powder and brewed coffee, but they are made with a combination of whole wheat pastry flour and this amazing Bob’s Red Mill Hazelnut Flour!

If you’ve never tried hazelnut flour I highly recommend it! Hazelnut flour is actually not flour at all, but rather hazelnuts ground up into a fine meal. Nut flours are great for people who are gluten free, paleo, grain free, or just love that nutty flavor and texture in their baked goods. This was my first time trying hazelnut flour. Before this I had only used Almond flour from Bob’s Red Mill (another great product!).

Along with the great flavor of the hazelnut meal, I also love the extra protein it adds to the muffins and the vitamin E. These muffins were so filling! Normally when I make muffins for breakfast I need 3 to fill me up, but because of the extra protein in these I only ate 2 and was perfectly full. So we’ve talked about the hazelnut flour, espresso, and coffee added to the muffin batter to give it that rich coffee flavor, now lets move on to the gooey rich Nutella that is stuffed in the middle of these yummy bites!

I love when food is stuffed with a little surprise in the middle. Seriously who doesn’t love biting into a delicious baked good only to find that there is something even more delicious hiding in the center of it?! As if these muffins couldn’t get any better, I decided to top them with a little hazelnut streusel, because it’s streusel and I absolutely adore the stuff! Are you like me and when you make streusel to put on top of muffins or a pie you find that half of it ends up in your mouth instead of on what you are baking? No, that’s just me? Ok, let’s pretend I didn’t just admit to doing that.

Ingredients 

For the Muffins

  • 1 1/4 cups whole wheat pastry flour
  • 1/2 cup hazelnut flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 t. instant espresso powder
  • 1 t. cinnamon
  • 1/8 t. nutmeg
  • 1 T. baking powder
  • 1/4 t. kosher salt
  • 3/4 cup strongly brewed coffee cooled
  • 2 T. butter melted
  • 1 T. grapeseed oil
  • 1/4 cup plain non fat Greek yogurt
  • 1 egg
  • 1 t. vanilla extract
  • 1/4 cup nutella

For the Streusel

  • 1/4 cup hazelnut flour
  • 1/4 cup whole wheat pastry flour
  • 1/4 cup brown sugar
  • 1/2 t. cinnamon
  • 3 T. cold butter cubed

Instructions 

  • Preheat oven to 400 degrees and line a 12-cup muffin tin with paper liners.
  • In a small bowl make the streusel by whisking together the hazelnut flour, whole wheat pastry flour, brown sugar, and cinnamon.
  • Cut the cold butter into the dry mixture until it resembles coarse crumbs, set aside.
  • In a large bowl whisk together all of the dry ingredients for the muffins.
  • In a smaller bowl whisk together the coffee, melted butter, oil, yogurt, egg, and vanilla.
  • Pour the wet ingredients into the dry and fold together with a rubber spatula just until combined.
  • Spoon a heaping tablespoon of the batter into the bottom of each muffin cup.
  • Spoon a teaspoon of the nutella on top of the batter.
  • Spoon another heaping tablespoon of the batter on top of the nutella.
  • Top the muffins with the streusel and bake in the oven for 15-18 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the muffins on a wire rack.

    Since I had no idea what to make with hazelnut meal, I clicked the link to check Bob’s site and found some yummy recipes. I think I’d like to make the Wheat Free Pumpkin Chocolate Chip Muffin.
