Summer is nearly over and for many of us grilling season is winding down as well. Of course if you live in southern California or Arizona you’re fortunate enough to have a year round grilling season.Then there are those people who enjoy standing out in the freezing cold weather manning the grill. If I get a major craving for a piece of grilled chicken or fish I’ll do it, but for the most part I stick to indoor cooking when the temperatures get below 50.
For those of you who don’t have the luxury of year round grilling weather or who don’t feel like bundling up and standing outside tending to the grill when there’s a chance of snow, I’ve come up with a wonderful recipe that is full of barbecue flavor and no grilling required. Oven roasted Korean Barbecue Chicken with Asian Coleslaw is where it’s at when you want to eat like it’s 80 degrees outside, when in fact it might only be 60.
The one downside to having to turn on the oven is waiting impatiently for it to preheat. I also sometimes feel like since I’m only cooking for my husband and myself that I’m wasting a lot of energy heating up that big oven. It wasn’t until Wolf Gourmet sent me their high performance countertop oven that I fell in love with throwing dinner in the oven again. Not to mention, it produced some of the most perfectly roasted chicken breasts I’ve ever made!
The countertop oven not only preheats much faster than a traditional oven, but it also cooks/bakes/roasts the food you put in it faster as well.
