Sheet pan Lemon Roasted Shrimp and Asparagus with Herbed Couscous is one of the easiest dinners I’ve made and It’s full of spring flavors! It can be on the table in 15 minutes or less!
Halfway through the week! For some reason this week seems to be going super slow. It’s not like I have anything big planned for the weekend that I’m anxiously waiting for, it’s just one of those weeks I guess. Along with the week dragging along, so is my motivation to cook dinner. Luckily I have an easy sheet pan meal that cooks in just 10 minutes, Lemon Roasted Shrimp and Asparagus with Herbed Couscous!
I’ve shared a few sheet pan dinners here on Recipe Runner and I absolutely love them. First there was this Sheet Pan Pesto Chicken with Zucchini and Tomatoes, you only need 4 ingredients to make this bad boy! Then I moved on to Sheet Pan Honey Mustard Salmon and Green Beans, hello omega-3’s! Of course let’s not forget this amazing Sheet Pan Crispy Teriyaki Tofu and Broccoli that will turn tofu haters into lovers, I could seriously eat this one at least once a week.
Now I have this Lemon Roasted Shrimp and Asparagus to add to the growing list and I especially love this one for spring. Asparagus is in it’s prime right now and I’ve been buying it every time I go to the store. It’s ridiculous how quickly we eat it, a whole pound barely lasts the day.
Lemon is also a flavor you see used a lot in spring and it just happens to pair perfectly with both asparagus and shrimp. The roasted asparagus and shrimp are served on top of an herbed lemony couscous. I hadn’t made couscous in so long that I forgot how easy it was. It cooks just as quickly as the shrimp!
