Here we go again with some more mini food!
Earlier this week I made cranberry orange curd, and boy was it delicious! I found myself sneaking spoonfuls of it when I wanted something sweet to eat. I decided there had to be a better way to put this curd to use other than eating it off of a spoon. I then remembered I had made some desserts this past summer using Athens Mini Fillo Shells. I love these things! They are perfect for appetizers and desserts. They would be just the thing to hold some of my cranberry orange curd.
That my friends is how the Mini Cranberry Orange Meringue Tarts were created. What could be better than a little handheld dessert that you can carry around with you and eat in two bites?
To make these tarts extra special I knew I had to make meringue to go on top of them. I don’t know about you but I love meringue! I not only love the sweet airy flavor of it, but I love making it as well. There is something so satisfying about whipping egg whites until they triple in size and become shiny and thick. The first time my husband saw me whip two egg whites into meringue he couldn’t get over how they changed into a pillowy cloud of deliciousness. My second favorite thing about making meringue is that I get to use my blowtorch. Who doesn’t love using a blowtorch! It makes me feel strong and powerful as I brown the tops of my Mini Cranberry Orange Meringue Tarts….I know, I know, this is a little strange.
The nice thing about these tarts is how amazingly easy they are to make. Once you have the curd made, the only things left to do are scoop it into the shells and make your meringue. This dessert is nice and light and would be perfect served at Thanksgiving after you are beyond stuffed, but still need a little something sweet. I don’t know about you, but I always need a little something sweet to end the day!
