Pineapple Coconut Lime Sherbet

What better way to stay cool this summer than with a scoop of this refreshing Pineapple Coconut Lime Sherbet! Easy to make, dairy free and so delicious!
Summer has officially arrived and it was not shy about showing off the warm weather yesterday. We got to about 95 degrees and I was feeling the heat. I know that 95 doesn’t sound terrible, I’m pretty sure Phoenix was 120…I don’t miss those AZ summers one bit! However, with the higher elevation here, 95 degrees actually feels more like 105. The good news was, that I still had leftovers of this Pineapple Coconut Lime Sherbet in the freezer to help keep me cool!
Ice cream, sherbet, sorbet, pretty much anything sweet and frozen always tastes extra delicious during the summer. That’s not to say that I don’t eat these things in the winter. Nope, not even a blizzard stops me from eating a bowl of ice cream on the weekend.
Every Saturday night I have to have ice cream, it’s a ritual for me and my one night (usually) that I splurge and have whatever dessert(s) that I want. If I happen to get a craving for something sweet and frozen during the week I try to keep it lighter and have a small bowl of this Pineapple Coconut Lime Sherbet or something similar.
I hadn’t planned to make this sherbet, but when the store had pineapples on sale for a dollar and I had half a can of coconut milk leftover from this Grilled Chicken Satay, I couldn’t resist getting out the ice cream maker and whipping this up!
Speaking of whipping it up, it couldn’t be any easier to make this sherbet! Simply add diced pineapple, lime zest and juice, coconut milk, fresh ginger, sugar and vanilla to a blender and blend it until it’s smooth. Then, pour the mixture into an ice cream maker and let it churn. You can eat it right away or let it chill in the freezer until it’s firm.
