Prosciutto Wrapped Grilled Asparagus with Red Wine Drizzle

Prosciutto Wrapped Grilled Asparagus with red wine drizzle is the perfect appetizer to serve this summer! Savory, sweet and easy to make!
It’s going to be one busy weekend! Tomorrow is my cousin’s high school graduation party and I offered to make all the dessert because I just can’t say no to making dessert. I’m making everything from brownies, to mini lemon cupcakes, rice krispie treats, chocolate chip cookies, and even some cute s’mores marshmallow pops! My kitchen will be on some serious sugar overload and I know it’s going to be so hard not to dive in and help myself to all the goodies. Luckily I know that there will be between 50-80 people all wanting to help themselves to some dessert, so I’ll try my hardest to restrain myself.
To prepare myself for this foodfest tomorrow I think I’ll make something light and easy for dinner tonight. Immediately these Prosciutto Wrapped Grilled Asparagus with Red Wine Drizzle came to mind. I made them earlier in the week and they were absolutely delicious!
If you’ve never grilled asparagus before I highly recommend giving it a try. It only takes about 5-6 minutes to cook on the grill and you are left with perfectly cooked asparagus with a delicious smokey grilled flavor. I love the way the ends of the asparagus get a little crispy and charred! The only seasoning on the asparagus is kosher salt and some freshly cracked black pepper and honestly that’s all it really needs.
While I could have wrapped the asparagus in bacon, we all know how good that would have tasted, I decided to go a little lighter and use prosciutto instead. Once the asparagus came off the grill I wrapped two pieces of them in half a slice of the prosciutto. The final flourish on this delicious little appetizer is the red wine drizzle. It’s made in the same way you would make a balsamic drizzle or reduction except we’re using red wine. Bonus being you can drink the remaining wine while you devour these prosciutto wrapped bites! The red wine drizzle is sweetened with honey. The sweetness is the perfect balance to the salty prosciutto and asparagus. This is a great grilled appetizer or side dish to serve this summer and is sure to make an asparagus lover out of anyone!
Prosciutto Wrapped Grilled Asparagus with Red Wine Drizzle
Ingredients
Prosciutto Wrapped Grilled Asparagus
- 1 pound asparagus washed and woody end cut off
- Olive oil or cooking spray for coating the asparagus
- Salt and pepper to taste
- 4 ounces thinly sliced prosciutto cut in half lengthwise
Red Wine Drizzle
- 1 cup red wine I used pinot noir
- 3 tablespoons honey
- Pinch of salt
Instructions
- Prosciutto Wrapped Grilled Asparagus
- Preheat grill to medium high heat. Toss the asparagus in oil or spray with cooking to coat, then sprinkle with salt and pepper.
- Place the asparagus on the hot grill and grill for about 3 minutes on one side then flip them over and grill them for another 2-3 minutes on the other side. Remove from the grill and cool slightly before wrapping two pieces in half a slice of the prosciutto.
- Red Wine Drizzle
- Pour the red wine, salt, and honey into a small saucepan and bring to a boil. Lower the heat to medium low and simmer until the sauce has reduced to about a 1/4 cup, stir occasionally.
- Drizzle the sauce over the prosciutto wrapped asparagus and serve immediately.
