Let me take a minute and talk about running before I dive into how delicious this Strawberry Mango Lassi is.
I feel like I’ve been neglecting talking about running lately. With the temperatures warming up I feel like I have more to share now. This was my first real winter experience with running. In Arizona I actually looked forward to running in winter because I didn’t feel like I was going to melt. However, things are a little different in Colorado. I would first like to start by saying thank goodness I bought a treadmill last fall. As much as I don’t like running on the treadmill it has saved me multiple times from having to cancel my run because it was too cold, snowing, or the worst, ice! To keep me sane while I run on the treadmill I record cooking shows and watch them. Surprisingly, Giada, Pioneer Woman, Brunch at Bobby’s, and Barefoot Contessa, really help the time go by, plus they gave me some great ideas for recipes! There also isn’t much in the form of racing during the winter months here in Colorado. There are occasional 5k races, but not much else. I was planning to do a half marathon a few weeks ago, but was glad I held off because it was snowing and very cold the day of the race. Things are changing though. The mornings are getting warmer, the sun is coming up sooner, and there shouldn’t be too many snow storms left (although I did see one in the forecast later this week). With all the changes I’m spending less time on the treadmill and more time outside and am loving it! My legs are finally growing used to all the hills around here, which was a huge change from running in Tempe, Arizona. I’m not saying that I like hills, but they are growing on me. I still curse at the big ones that leave me gasping for air and my quads feeling like they are on fire, but it’s nothing like when I first moved here. I don’t know if it’s all the hills, the high altitude, or the extra mileage I’ve been running, but it leaves me feeling constantly hungry and thirsty. Today after my run I made this delicious Strawberry Mango Lassi.
I’ve been eyeing up the champagne mangos at Whole Foods for the past week and finally yesterday I bought a couple. They are perfectly ripe and sweet right now and were perfect for this lassi. In case you don’t know what a lassi is, it’s a sweet or savory Indian drink made with yogurt or buttermilk. I made mine sweet and used Greek yogurt to thicken it. Mango is a very common type of lassi, but I decided to put a little spin on mine since I had leftover strawberries from making my Strawberry Meyer Lemon Poppy Seed Muffins last week. The Strawberry Mango Lassi was sweet and filling, just what I needed after my run. I love the creaminess of this drink, it makes me feel like I’m having a milkshake and who wouldn’t want a milkshake for breakfast! Most lassi’s use ice in them, but since my strawberries were frozen I didn’t need it. I also threw in a pinch of cinnamon and cardamom which really warmed up the flavor. I can definitely see myself making more of these as the temperatures continue to warm up!
