Australian Style creamy yogurt replaces a portion of the butter in these light and delicious strawberry rhubarb flavored scones!
The season where turning your oven on is welcomed is coming to a close. Temperatures are warming up and the desire to bake isn’t as appealing as it was a few months ago. When I lived in Arizona, the thought of turning on the oven between May and September made me break out in a sweat just thinking about it.
Here in Colorado the thought of turning on the oven today actually sounds pretty nice. We’re continuing to get pummeled with rain, clouds, and temperatures that are only in the 50’s and 60’s. I’ve had quite enough of it and want my sunshine back!
In the meantime, I’ll continue to stay curled up in my blanket and bake another batch of these delicious Strawberry Rhubarb Yogurt Scones.
With summer approaching I knew I wanted to create something lighter and portable that I could enjoy for a breakfast or snack on the go. Summer for me is all about spending as much time outdoors as I can.

Most scone recipes aren’t exactly ranked high on the lighter breakfast or snack options, but these Strawberry Rhubarb Yogurt Scones are thanks to replacing a portion of the butter and all of the cream with delicious Yulu Yogurt!
Have you guys tried Yulu Yogurt yet? It’s a fairly new brand and it seriously blew my mind from the very first bite! Yulu Yogurt is Australian Style yogurt meaning it’s double-smoothed and creamier than any yogurt I have ever tasted. I felt like I was eating cheesecake!
The good news is Yulu Yogurt doesn’t have the calories and fat that cheesecake does. What it does have is 9 grams of protein per serving, and clean, fresh flavors like vanilla bean (this is what I used), strawberry, blueberry, raspberry, and honey.
If you don’t like the tart taste of Greek yogurt you will find the smooth, creamy flavor of Aussie Style yogurt much more appealing!
The creamy, rich, protein packed yogurt was the perfect replacement for butter and cream in my Strawberry Rhubarb Yogurt Scones. The vanilla bean flavor that I used was an added bonus to the strawberry rhubarb combo, but I imagine that the honey flavor would be equally delicious.
The scones are amazing right out of the oven, but like muffins, scones freeze well, making them perfect for a grab and go breakfast to fuel your next outdoor adventure this summer!
