- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 cup chopped pecans optional
- 1 apple diced
- 1 3/4 cup milk of choice
- 1/3 cup maple syrup
- 1 eggs
- 1 teaspoon vanilla bean paste or extract
- Extra apple slices for topping the oatmeal optional
Preheat oven to 350° F. and spray a 8x8 baking pan with cooking spray.
In a large bowl whisk together the egg, milk, maple syrup, and vanilla. Add in the oats, cinnamon, allspice, baking powder, and salt. Stir until combined. Stir in the diced apple and pecans.
Pour the mixture into the prepared baking pan and bake for 35-40 minutes or until set and pulling away from the edges of the pan. Let the baked oatmeal cool for at least 10-15 minutes before serving.
