Honey Balsamic Vinaigrette
- 2 tablespoons balsamic vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- Kosher salt and fresh ground black pepper to taste
Salad
- 5 ounces baby kale
- 1 1/2 cups hulled and chopped strawberries
- 1 cup fresh blueberries
- 1 cup canned chickpeas, rinsed and drained
- 3 ounces feta cheese, cubed
- 1/4 cup shelled unsalted sunflower seeds
1. Whisk together all of the ingredients for the honey balsamic vinaigrette and set aside.
2. In a large serving bowl combine the baby kale, strawberries, blueberries, chickpeas, feta and sunflower seeds. Serve with the honey balsamic vinaigrette on the side or add it to the salad just before serving.
