Blueberry Basil Rice Salad

One of my favorite easy to make, sweet and savory, rice salads!

Ingredients

Blueberry Basil Salad

  • 1 pre-portioned bag Minute Multi-Grain Medley
  • 1 cooked chicken breast diced
  • 1/2 cup fresh blueberries
  • 1/4 cup crumbled goat cheese
  • 1 tablespoon fresh basil chopped

Honey-Balsamic Vinaigrette

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons water
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons honey
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon garlic powder
  • Black pepper to taste

Instructions

  • Cook the Minute Multi-Grain Medley in the microwave according to package instructions.
  • Let the rice cool to room temperature then add in the chicken, blueberries, basil, and goat cheese.
  • In a small bowl or jar, whisk or shake all of the vinaigrette ingredients together until well combined.
  • Pour the desired amount of dressing over the salad then fold everything together with a spoon.
  • Serve immediately or cover and refrigerate until ready to serve.
