Brie Crostini with Prosciutto

- 1/2 of a baguette cut into 12 (1/2 inch thick) diagonal slices
- 1/2 cup apricot jam
- 2 ounces prosciutto each slice cut into thirds
- 12 slices brie cheese cut approximately 1/4 inch thick
- Honey for drizzling on top
Preheat oven to 375° F. And line a baking sheet with parchment paper. Place the cut pieces of prosciutto on the baking sheet, and bake for about 10 minutes or until crisp.
While the prosciutto bakes, spread approximately 1-2 teaspoons of the apricot jam onto each slice of baguette and place them on a baking sheet. Top with a slice of brie cheese.
Remove the prosciutto from the oven and put the crostini in. Bake for 6-8 minutes or until the brie is melted. Remove from the oven and place 1 or 2 pieces of the crispy prosciutto on top of the brie. Drizzle with honey and serve.
