Cauliflower Kale Puree
A low carb, high fiber alternative to creamy mashed potatoes.

- 1 head of cauliflower, chopped
- 2 cups chopped kale, stems removed
- 1 clove garlic, minced
- 1 teaspoon kosher salt divided
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup shredded parmesan cheese, optional
In a large pot, bring the chopped up cauliflower to a boil and cook until it is very soft.
While the cauliflower is cooking saute the chopped kale, garlic, and 1/4 teaspoon of kosher salt on medium high heat for 2-3 minutes in a large pan sprayed with cooking spray.
Once the kale has wilted remove it from the heat.
Add the cooked cauliflower to a large bowl, blender, or food processor.
Puree the cauliflower until it is smooth.
Add the remaining salt, pepper, kale mixture, and parmesan cheese to the cauliflower puree and stir together.
