Ingredients

Chocolate Chia Pudding

  • 1 cup unsweetened vanilla almond milk
  • 3 tablespoons chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 3 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • chopped dark chocolate or dairy-free chocolate for topping optional

Matcha Chia Pudding

  • 1 cup unsweetened vanilla almond milk
  • 3 tablespoons chia seeds
  • 3 tablespoons maple syrup
  • 1 teaspoon matcha powder
  • 1/2 teaspoon vanilla extract

Instructions

Chocolate Chia Pudding

  • In a large bowl whisk together the cocoa powder and chia seeds. Slowly pour in the almond milk whisking the entire time to prevent clumps from forming.
  • Whisk in the maple syrup and vanilla extract. Cover with plastic wrap and refrigerate overnight.

Matcha Chia Pudding

  • In a large bowl whisk together the matcha powder and chia seeds. Slowly pour in the almond milk whisking the entire time to prevent clumps from forming.
  • Whisk in the maple syrup and vanilla extract. Cover with plastic wrap and refrigerate overnight.

Assembling

  • Spoon equal amounts of the chocolate chia pudding into 4 glasses or jars. Top with equal amounts of the matcha chia pudding. Repeat with more layers until all of the pudding is used.
  • Top with chopped dark chocolate or dairy-free chocolate if desired. Serve immediately or cover and store in the fridge to eat throughout the week (they should keep for approximately 4-5 days).
