Chocolate Chia Pudding
- 1 cup unsweetened vanilla almond milk
- 3 tablespoons chia seeds
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- chopped dark chocolate or dairy-free chocolate for topping optional
Matcha Chia Pudding
- 1 cup unsweetened vanilla almond milk
- 3 tablespoons chia seeds
- 3 tablespoons maple syrup
- 1 teaspoon matcha powder
- 1/2 teaspoon vanilla extract
Chocolate Chia Pudding
In a large bowl whisk together the cocoa powder and chia seeds. Slowly pour in the almond milk whisking the entire time to prevent clumps from forming.
Whisk in the maple syrup and vanilla extract. Cover with plastic wrap and refrigerate overnight.
Matcha Chia Pudding
In a large bowl whisk together the matcha powder and chia seeds. Slowly pour in the almond milk whisking the entire time to prevent clumps from forming.
Whisk in the maple syrup and vanilla extract. Cover with plastic wrap and refrigerate overnight.
Assembling
Spoon equal amounts of the chocolate chia pudding into 4 glasses or jars. Top with equal amounts of the matcha chia pudding. Repeat with more layers until all of the pudding is used.
Top with chopped dark chocolate or dairy-free chocolate if desired. Serve immediately or cover and store in the fridge to eat throughout the week (they should keep for approximately 4-5 days).
