Ingredients

  • 2 cups cooked shrimp, chopped
  • 2 cups diced cucumber, English or Persian cucumbers preferred
  • 1 cup diced red bell pepper
  • 1 jalapeño, seeds removed and minced
  • 2 tablespoons chopped flat leaf parsley
  • 1 tablespoon chopped fresh mint
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • Kosher salt and fresh ground black pepper to taste

Instructions

  • Add all of the ingredients to a serving bowl, stir together until combined and coated in the lemon juice and olive oil. Taste for seasoning and serve.
