Dirty Chai Oatmeal

- 1/2 cup strong brewed coffee
- 1/2 cup unsweetened vanilla almond milk or milk of choice
- 1/2 cup old fashioned rolled oats
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon kosher salt
- 1 tablespoon pure maple syrup, or to taste
- 3/4 teaspoon vanilla extract
In a small saucepan over high heat bring the coffee/espresso and the milk to a boil. Add in the oats and lower the heat to medium cooking the oats for 5 minutes or until most of the liquid is absorbed.
Stir in all the spices, salt, and vanilla extract, cover with a lid, and remove from the heat. Let the oatmeal sit covered for 2 minutes before stirring in the maple syrup. For serving top with more maple syrup and cinnamon if desired.
