Edamame Salad

- 1 lemon, juiced (1/4 cup)
- 2 tablespoons olive oil
- 1 - 2 teaspoon honey optional
- 1/2 teaspoon oregano
- Kosher salt and freshly ground black pepper to taste
- 12 ounces shelled edamame
- 1 cup chopped Persian cucumbers
- 1 cup diced red bell pepper
- 3 green onions, thinly sliced
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped flat leaf parsley
In a salad bowl, whisk together the lemon juice, olive oil, dried oregano, salt and pepper.
Add the remaining ingredients to the salad bowl and toss everything together until it's coated in the vinaigrette. Taste for seasoning and adjust if needed.
