Eggnog Waffles
- 1 cup white whole wheat flour
- 2 teaspoons baking powder
- 2 teaspoons granulated sugar
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 1 cup eggnog, regular or dairy-free
- 1 tablespoon melted coconut oil, or melted butter
- 1 egg
- 1/2 teaspoon rum extract optional
- 1/4 teaspoon vanilla extract
Eggnog Drizzle
- 1/4 cup powdered sugar
- 1 teaspoon eggnog
- 1/4 teaspoon rum extract optional
Eggnog Waffles
In a large bowl whisk together the flour, baking powder, sugar, cinnamon, nutmeg, and salt.
In a small bowl whisk together the melted butter, eggnog, egg, and extracts. Pour the wet ingredients into the dry ingredients and whisk together until batter is smooth.
Scoop the batter into the heated and greased waffle iron (the amount you scoop in will depend on the size of the waffle iron). Cook the waffle according to the manufacturers instructions. Top the waffles with eggnog drizzle or syrup.
