Ingredients

Chicken Seasoning

  • 1 pound boneless skinless chicken breasts
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon lemon pepper seasoning
  • 1/4 teaspoon garlic powder
  • Kosher salt and black pepper to taste

Greek Chicken Salad Lettuce Cups

  • 1/2 cup diced English cucumber
  • 1/2 cup diced roasted red peppers
  • 1/4 cup diced red onion
  • 1/4 cup chopped jarred artichokes
  • 1 tablespoon chopped fresh flat leaf parsley
  • 2 ounces feta cheese cut into cubes
  • 8 Kalamata olives, chopped
  • Butter or romaine lettuce for serving the chicken salad in

Red Wine Vinaigrette

  • 3 tablespoons red wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey
  • 2 teaspoons dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder

Instructions

  • Season the chicken breasts with the spice mixture and bake, grill, or sautè them. Let the chicken cool then dice it into bite sized pieces and place in a large bowl.
  • Add all of the remaining ingredients for the chicken salad, except the lettuce to the bowl.
  • In a small bowl whisk together all of the ingredients for the red wine vinaigrette. Pour the desired amount of vinaigrette over the chicken salad and toss together.
  • Serve the chicken salad in the butter or romaine lettuce cups.
