Chicken Seasoning
- 1 pound boneless skinless chicken breasts
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon lemon pepper seasoning
- 1/4 teaspoon garlic powder
- Kosher salt and black pepper to taste
Greek Chicken Salad Lettuce Cups
- 1/2 cup diced English cucumber
- 1/2 cup diced roasted red peppers
- 1/4 cup diced red onion
- 1/4 cup chopped jarred artichokes
- 1 tablespoon chopped fresh flat leaf parsley
- 2 ounces feta cheese cut into cubes
- 8 Kalamata olives, chopped
- Butter or romaine lettuce for serving the chicken salad in
Red Wine Vinaigrette
- 3 tablespoons red wine vinegar
- 1 tablespoon extra virgin olive oil
- 1 tablespoon honey
- 2 teaspoons dijon mustard
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
Season the chicken breasts with the spice mixture and bake, grill, or sautè them. Let the chicken cool then dice it into bite sized pieces and place in a large bowl.
Add all of the remaining ingredients for the chicken salad, except the lettuce to the bowl.
In a small bowl whisk together all of the ingredients for the red wine vinaigrette. Pour the desired amount of vinaigrette over the chicken salad and toss together.
Serve the chicken salad in the butter or romaine lettuce cups.
