Ground Beef and Noodles Recipe

Ground beef and noodles is an easy 30-minute dinner made with lean ground beef, vegetables, tender egg noodles, and a savory homemade gravy.

Ingredients

  • 8 ounces uncooked egg noodles
  • 1 pound lean ground beef
  • 1/2 cup diced shallot or yellow onion
  • 3/4 teaspoon Italian seasoning
  • 3/4 teaspoon fine kosher salt or to taste
  • black pepper to taste
  • 2 cloves garlic grated or minced
  • 1 cup frozen peas and carrots
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 2 cups low sodium beef broth
  • 2 tablespoons chopped flat leaf parsley plus extra for garnish
  • 1/3 cup plain whole milk Greek yogurt room temperature

Instructions

  • Boil a pot of salted water and cook the egg noodles until al dente.
  • Cook and crumble the ground beef and shallot in a large skillet over medium-high heat. Season with Italian seasoning, salt, and pepper.
  • Once the beef is cooked through turn the heat down to medium. Add in the garlic, worcestershire, peas and carrots. Cook for 30 seconds then stir in the flour. Cook for 1 minute stirring until you no longer see and white streaks from the flour (this cooks out the raw flour taste).
  • Slowly pour in the beef broth, stirring continuously. Scrape up any bits that are stuck to the bottom of the skillet. Continue to cook for another 5-10 minutes, stirring occasionally, until the gravy is a consistency that you like.
  • Turn off the heat and pour the egg noodles, Greek yogurt, and parsley in with the ground beef mixture. Stir everything together until the Greek yogurt is fully incorporated into the gravy and the noodles are coated. Garnish with extra parsley and serve.

Notes

Storage - Leftovers will keep for 3-4 days in an airtight container in the refrigerator. 
Reheating - Reheat in the microwave for 60 seconds or until warm. You can also reheat in a skillet on the stove over medium-low heat.
Freezing - If you freeze the leftovers, just freeze the ground beef and gravy mixture. The egg noodles will be mushy once they're defrosted. Defrost the ground beef in the fridge overnight then reheat it on the stove and add cooked egg noodles in with it.
