- 6 tablespoons unsalted butter, room temperature
- 2 tablespoons plain Greek yogurt, room temperature
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup old fashioned oats quick oats work also
- 3/4 cup all purpose flour
- 1/4 cup white whole wheat flour
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- Powdered sugar for rolling the cookies in after baking
Preheat oven to 325° F. Line a baking sheet with a silpat mat or parchment paper.
Beat the butter, Greek yogurt, powdered sugar, and vanilla extract in a stand mixer until smooth.
In a separate bowl whisk together the oats, flours, salt, and cinnamon. Add the dry mixture to the butter mixture and beat until everything is combined.
Roll the dough into 1 inch balls and place them on the baking sheet.
Bake at 325° F. for 20-25 minutes. Cool the cookies on a wire rack. Once the cookies are cooled roll them in powdered sugar. Store the cookies in an airtight container.
