Healthy Grilled Chicken Waldorf Salad
This crunchy and fresh chicken Waldorf salad is loaded with apples, grapes and pistachios it's perfect for using up leftover grilled chicken!

Salad
- 2 grilled chicken breasts, diced
- 1 apple, diced
- 1 cup halved grapes
- 1/4 cup diced celery
- 1/4 cup shelled pistachios, I used unsalted
- 1 tablespoon fresh lemon juice
- Kosher salt and black pepper to taste
- Lettuce or bread for serving
Dressing
- 1/2 cup plain Greek yogurt
- 1/2 teaspoon lemon zest
- Juice of half a lemon
- 1 tablespoon minced chives
- 1 teaspoon dijon mustard
- Kosher salt and black pepper to taste
In a large bowl add all of the salad ingredients and toss together.
In a small bowl whisk together all of the dressing ingredients.
Pour the dressing over the salad and fold together until everything is combined. Serve on top of a salad or as a sandwich.
