Healthy Grilled Chicken Waldorf Salad

This crunchy and fresh chicken Waldorf salad is loaded with apples, grapes and pistachios it's perfect for using up leftover grilled chicken!

Ingredients

Salad

  • 2 grilled chicken breasts, diced
  • 1 apple, diced
  • 1 cup halved grapes
  • 1/4 cup diced celery
  • 1/4 cup shelled pistachios, I used unsalted
  • 1 tablespoon fresh lemon juice
  • Kosher salt and black pepper to taste
  • Lettuce or bread for serving

Dressing

  • 1/2 cup plain Greek yogurt
  • 1/2 teaspoon lemon zest
  • Juice of half a lemon
  • 1 tablespoon minced chives
  • 1 teaspoon dijon mustard
  • Kosher salt and black pepper to taste

Instructions

  • In a large bowl add all of the salad ingredients and toss together.
  • In a small bowl whisk together all of the dressing ingredients.
  • Pour the dressing over the salad and fold together until everything is combined. Serve on top of a salad or as a sandwich.
