Ingredients

Heirloom Tomato Cucumber Salad

  • 3 heirloom tomatoes, sliced
  • 1/2 English cucumber, seeded and sliced into half moons
  • 1/4 cup fresh basil leaves, use more or less depending on what you like
  • Thinly sliced red onion the amount used is up to you
  • Kosher salt and freshly ground black pepper to taste

Peach Vinaigrette

  • 1 peach, peeled and diced
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil approximately 4-5 leaves
  • Kosher salt and freshly ground black pepper to taste

Instructions

Peach Vinaigrette

  • Combine all of the ingredients for the vinaigrette in a blender and blend until smooth.
  • Pour into a jar or other airtight container and refrigerate until ready to use.

Heirloom Tomato Cucumber Salad

  • Arrange the tomatoes, cucumber, red onion and basil on a serving plate.
  • Season with kosher salt, black pepper and some of the peach vinaigrette.
  • Serve immediately.
