Sweet, smoky, and perfectly spicy, this honey chipotle chicken is made with an easy marinade that keeps the chicken juicy and flavorful. Grill it, cook it on the stovetop, or bake it, then use it for tacos, rice bowls, salads, and more.
Combine all of the ingredients except the chicken in a glass measuring cup. Whisk together until well combined. Use a meat mallet to pound out the chicken so it's even in thickness.
Place the chicken in a freezer bag then pour in the marinade. Press the air out of the bag and seal it. Massage the marinade into the chicken. Refrigerate and marinate for at least an hour, 4-6 hours if you have the time.
Remove the chicken from the fridge 30 minutes before cooking it to bring it to room temperature.
Preheat the grill to 400° F. When the grill is hot, brush the grates until they're clean and coat them with cooking oil. Shake the excess marinade off of the chicken and place it on the grill.
Close the grill lid and cook for 6-8 minutes then flip the chicken and grill another 6-8 minutes or until the internal temperature reaches 160° F. The chicken will continue to cook to 165° F. as it rests.
Remove the chicken from the grill onto a plate and cover it loosely with foil and let it rest for 5-10 minutes before cutting and serving.
