Italian Sloppy Joes

- 1 tablespoon olive oil
- 1/2 cup diced yellow onion
- 1/2 cup diced red bell pepper
- 1 clove garlic, grated or minced
- 1 pound lean ground turkey, or ground chicken
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 cups marinara sauce
- 1/2 cup water
- 1 tablespoon balsamic vinegar
- 2 tablespoons chopped parsley
- 1/2 cup shredded mozzarella cheese
- 6 buns
In a large skillet, heat the olive oil over medium-high heat. Swirl to coat the bottom and then add in the onion, red bell pepper and garlic. Sauté for 2-3 minutes.
Add the ground turkey to the vegetable and crumble it with a wooden spoon. Add in the basil, oregano, red pepper flakes and season with salt and pepper. Cook for 6-8 minutes or until the turkey is cooked through.
Pour the marinara sauce, water and balsamic vinegar into the skillet and stir everything until combined. Bring to a simmer and then lower the heat to medium-low and let it simmer and reduce for another 10 minutes. Stir occasionally.
While the meat mixture is cooking, brush the inside of the buns with olive oil and sprinkle with garlic powder and salt. Toast or broil until golden brown.
When the meat sauce has thickened stir in the parsley. Taste for seasoning then serve on the toasted buns topped with mozzarella cheese.
