Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 1/2 cup diced red bell pepper
  • 1 clove garlic, grated or minced
  • 1 pound lean ground turkey, or ground chicken
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups marinara sauce
  • 1/2 cup water
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons chopped parsley
  • 1/2 cup shredded mozzarella cheese
  • 6 buns

Instructions

  • In a large skillet, heat the olive oil over medium-high heat. Swirl to coat the bottom and then add in the onion, red bell pepper and garlic. Sauté for 2-3 minutes.
  • Add the ground turkey to the vegetable and crumble it with a wooden spoon. Add in the basil, oregano, red pepper flakes and season with salt and pepper. Cook for 6-8 minutes or until the turkey is cooked through.
  • Pour the marinara sauce, water and balsamic vinegar into the skillet and stir everything until combined. Bring to a simmer and then lower the heat to medium-low and let it simmer and reduce for another 10 minutes. Stir occasionally.
  • While the meat mixture is cooking, brush the inside of the buns with olive oil and sprinkle with garlic powder and salt. Toast or broil until golden brown.
  • When the meat sauce has thickened stir in the parsley. Taste for seasoning then serve on the toasted buns topped with mozzarella cheese.
