Lasagna Sloppy Joes

All the flavor of traditional lasagna with a fraction of the work!

Ingredients

Meat Sauce

  • 1 pound lean ground beef
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Kosher salt and black pepper to taste
  • 1 1/2 cups marinara sauce
  • 2 cups baby spinach

Other Ingredients

  • 6 slices whole wheat artisan bread
  • olive oil
  • 1/2 clove garlic
  • 1/4 cup shredded parmesan cheese
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • chopped fresh basil for garnish, optional

Instructions

Meat Sauce

  • Heat a large non-stick skillet over medium-high heat. When the skillet is hot add in the ground beef and crumble.
  • Add in all of the spices and season with kosher salt and black pepper. When the beef is cooked all the way through, remove it from the skillet onto a plate lined with paper towels to drain the excess fat.
  • Remove the fat/grease from the skillet and wipe clean with a paper towel.
  • Turn the heat down to medium and add in the marinara sauce and baby spinach. Cook the sauce until the spinach wilts then add the cooked ground beef back in. Stir everything together until it's combined and warmed through.

Assembling the Lasagna Sloppy Joes

  • Preheat oven to broil.
  • Spray a baking sheet with cooking spray and lay the slices of bread on it. Brush the tops of the bread with a little olive oil or spray them with cooking spray. Place the baking sheet in the oven and broil until golden brown.
  • Remove the bread from the oven and immediately rub the top with the cut side of the half clove of garlic. Sprinkle the parmesan cheese evenly over the tops of the bread.
  • Spoon some of the meat sauce onto the tops of each piece of bread and top with the ricotta and mozzarella cheese.
  • Place back in the oven and broil until the mozzarella cheese is melted. Sprinkle with fresh chopped basil, kosher salt and black pepper if desired and serve immediately.
