Ingredients

  • 2 medium sized zucchini thinly sliced into half moons
  • 2 medium sized yellow squash thinly sliced into half moons
  • 1 cup cherry tomatoes halved
  • 1/4 cup kalamata olives chopped
  • 2 ounces feta cheese cubed or crumbled
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon granulated garlic
  • Kosher salt and fresh ground black pepper to taste

Instructions

  • In a large serving bowl whisk together the lemon zest, juice, olive oil, granulated garlic, salt and pepper.
  • Add all of the ingredients to the bowl and gently toss to coat them in the lemon dressing. Taste for seasoning and serve.

Notes

This salad is best eaten the day it's made.
