Mini Taco Cups

Wonton cups filled with delicious taco filling and topped with melted cheese are an easy to make appetizer that everyone will love!

Ingredients

For the Mini Taco Cups

  • 12 wonton wrappers
  • 1 pound lean ground turkey or beef
  • 1/3 cup black beans, rinsed and drained
  • 1/3 cup frozen corn, defrosted
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 1/2 cup jarred salsa
  • 1/2 cup shredded cheddar cheese
  • tomatoes, shredded lettuce, olives, green onions, and green chiles for toppings

Greek Yogurt Sauce

  • 1/4 cup plain Greek yogurt
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon cumin
  • 1/8 teaspoon salt
  • 1 teaspoon lime juice

Instructions

  • Preheat oven to 375° F. and spray a standard size 12 cup muffin pan with cooking spray. Press a wonton wrapper into each muffin tin cup and set aside.
  • In a skillet over medium high heat brown and crumble the turkey. When the turkey is cooked through add in the remaining ingredients except the cheese. Cook the mixture for another 2 minutes.
  • While the taco filling is cooking whisk together all of the ingredients for the Greek yogurt sauce in a small bowl.
  • Spoon a heaping tablespoon of the taco filling into each wonton cup and top with a little shredded cheddar cheese.
  • Place the mini taco cups in the oven and bake for 7-8 minutes or until the edges of the wonton wrappers are golden brown. Remove from the oven and top with the Greek Yogurt Chili Sauce and any other additional toppings.
