Oatmeal Chocolate Chip Cookie Bars

Oatmeal Chocolate Chip Cookie Bars are thick, chewy and loaded with chocolate!

Ingredients

  • 3/4 cup white whole wheat flour
  • 1 1/4 cup old fashioned rolled oats
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup melted unsalted butter
  • 1/2 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 3 ounces chopped dark chocolate, or 1/2 cup chocolate chips
  • Flaky sea salt for sprinkling on top of the bars

Instructions

  • Preheat oven to  350° F. Spray an 8x8 metal baking pan with cooking spray.
  • In a bowl, whisk together the flour, oats, cinnamon, baking powder, baking soda, and salt. In a separate bowl whisk together the melted butter, sugars, egg and vanilla until smooth and well combined.
  • Pour the wet ingredients in with the dry and stir together with a rubber spatula until combined. Fold in the chocolate. Dump the cookie dough into the prepared baking pan and use the rubber spatula or your hands to spread and press the dough evenly into the pan. Bake on the middle rack of the oven for 18-20 minutes. Let cool for at least 30 minutes before cutting.

Notes

If the dough is sticking to the spatula when you spread it into the pan, lightly spray the spatula with cooking spray.
