Roasted Red Pepper Hummus

Made with sweet roasted red bell peppers, chickpeas, tahini, lemon juice, garlic, and spices. It's perfect for snacking or serve it as an appetizer!

Ingredients

  • 2 tablespoons aquafaba from the can of chickpeas
  • 15 ounces chickpeas rinsed and drained
  • 4 ounces jarred roasted red peppers no liquid and roughly chopped
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons tahini
  • 1 clove grated garlic, or 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • 2 tablespoons olive oil
  • 2 tablespoons water additional olive oil can be used if preferred

Instructions

  • Place the aquafaba, chickpeas, red peppers, lemon juice, garlic, spices, and salt in a high speed blender or food processor and blend until the ingredients are broken down. It will not be smooth at this point.
  • Add in the olive oil and water and purée until smooth. Taste for seasoning and add additional salt, lemon juice or olive oil as needed.
  • Top the hummus with chopped roasted red peppers, olive oil, and za'atar if desired. Serve with warm pita bread and vegetables.
