Cut a slit lengthwise in the medjool dates and remove the seed.
In a small bowl stir together the softened goat cheese, chopped almonds, salt and pepper until they are well combined.
Stuff each date with some of the almond goat cheese mixture. Serve immediately or store in an airtight container in the refrigerator until ready to serve.
Notes
If you make the dates ahead of time and refrigerate them, remove them from the refrigerator 10-15 minutes before serving so they soften a bit.
