Smoked Romesco Dip
Almonds, roasted red peppers, garlic and plenty of smoked paprika make this smoked romesco dip so flavorful and highly addicting!

- 1/2 cup raw almonds, toasted and cooled
- 1/4 cup flat leaf parsley
- 1 clove of garlic
- 12 ounce jar roasted red peppers drained
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon smoked paprika
- Kosher salt and fresh ground black pepper to taste
Add all of the ingredients to a food processor or high speed blender and pulse until smooth, about 2 minutes. Taste for seasoning and add salt and pepper as needed. Pulse to combine then serve with chips, crackers, or veggies.
