Strawberry Spinach Salad

This simple strawberry spinach salad is made with baby spinach, sweet strawberries, red onion, toasted almonds, goat cheese, and a creamy poppy seed dressing.

Ingredients

Strawberry Spinach Salad

  • 1/2 cup sliced almonds toasted
  • 1/2 cup thinly sliced red onion
  • 10 ounces baby spinach
  • 1 quart strawberries hulled and sliced
  • 2 ounces crumbled goat cheese

Instructions

  • Toast the almonds in a skillet on the stove or in the oven. Let them cool while you make the salad.
  • Combine all of the ingredients for the poppy seed dressing in a measuring glass or bowl and whisk together until smooth. Taste for seasoning and set aside.
  • In a large salad bowl add the spinach. Top it with the strawberries, red onions, crumbled goat cheese and almonds.
  • Top the salad with the poppy seed dressing and serve immediately.

Notes

Don't add the dressing to the salad until you're ready to serve it or the ingredients will get soggy.
