Taco Skillet

This one pan taco skillet is made with ground turkey, bell peppers, green chiles, corn, black beans, salsa, homemade taco seasoning and an irresistible cheesy tortilla chip topping.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 1 red bell pepper diced
  • 1 pound lean ground turkey
  • 2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper to taste
  • 4 ounce can diced green chiles
  • 15 ounce can black beans drained and rinsed
  • 1/2 cup frozen corn
  • 2 tablespoons chopped cilantro
  • 15 ounce jar salsa
  • 1 cup shredded colby jack cheese
  • 10 tortilla chips

Instructions

  • Preheat oven to broil.
  • Heat a 12 inch skillet over medium-high heat. Add in the olive oil and swirl to coat the bottom of the pan. Add the ground turkey to the skillet and crumble it.
  • Push the turkey to one side of the skillet and add in the peppers and onions. Sprinkle salt, pepper, and the dried spices on top. Saute the veggies and continue to cook and crumble the turkey until it's cooked through.
  • Pour in the black beans, corn, green chiles cilantro, and salsa. Stir everything together until it's combined and heated through.
  • Top the mixture with the tortilla chips and cheese then place it in the oven under the broiler.
  • Broil until the cheese is melted and lightly browned. Garnish with cilantro and serve.
