Whole Wheat Strawberry Banana Bread

- 2 cups white whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup honey, or maple syrup
- 2 cups ripe mashed bananas
- 1/2 cup plain Greek yogurt
- 2 eggs
- 1/4 cup melted butter
- 2 teaspoons vanilla extract
- 1/2 cup diced strawberries
- 1 sliced strawberry for the top of the bread
Preheat oven to 350° F. Grease and flour a 9x5 loaf pan and set aside.
In a large bowl combine the flour, baking soda, salt, and cinnamon. Whisk together and set aside.
In another mixing bowl mash the bananas, add the Greek yogurt, eggs, melted butter and vanilla. Whisk together all of the wet ingredients until completely combined.
Add the wet ingredients to the dry ingredients and fold together until just combined. Gently fold in the diced strawberries.
Pour the batter into the prepared loaf pan and bake for 45-55 minutes or until a toothpick comes out clean. Let the loaf cool in the pan for 5 minutes and then transfer it to a wire cooling rack to finish cooling.
