Ingredients

Salad

  • 1 1/2 cups cooked quinoa
  • 5 ounces baby kale or spinach
  • 1 apple, diced
  • 1 orange, peeled, segmented and diced
  • 1/3 cup pomegranate seeds
  • 1/4 cup sliced almonds toasted
  • 2 ounces goat cheese crumbled

Champagne Vinaigrette

  • 3 tablespoons champagne vinegar or white wine vinegar
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon minced shallot
  • 2 teaspoons dijon mustard
  • 2 teaspoons honey
  • Kosher salt and fresh ground black pepper to taste

Instructions

  • Whisk together the ingredients for vinaigrette and set aside.
  • In a large serving bowl combine all of the salad ingredients and toss gently.
  • Add in the vinaigrette and toss together or serve on the side.

Notes

If you plan to eat this salad multiple days, don't add in the vinaigrette to prevent the salad from getting soggy.
