Apple Cider Vinaigrette

- 1 cup unsweetened apple cider
- 2 tablespoons apple cider vinegar
- 2 tablespoons minced shallot
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper to taste, I use approximately 1/4 teaspoon salt
In a small saucepan add the apple cider, apple cider vinegar, and shallots. Bring the mixture to a boil and then lower the heat and simmer. Let it cook for about 10 minutes or until it has reduced by half.
Remove from the heat and pour into a jar. Add in the dijon, maple syrup, olive oil, salt and pepper. Put the lid on the jar and shake until well combined.
