Ingredients

  • Apple cider – Use an apple cider that is only made with apples. No added sugar or spices.
  • Apple cider vinegar – Not to be confused with the apple cider. It provides the acid for the vinaigrette.
  • Shallot – Shallots give the vinaigrette and mild onion flavor that won’t overpower the other flavors.
  • Maple syrup – The sweetener for the vinaigrette.
  • Dijon mustard – Tangy and acts as an emulsifier.
  • Olive oil – Extra virgin olive oil thickens the vinaigrette and balances the acid and sweetness.
  • Salt and pepper – Balances and brings out the flavors in the vinaigrette.

How to Make Apple Cider Vinaigrette

Add the apple cider, apple cider vinegar, and shallots in a small saucepan. Bring the mixture to a boil then reduce the heat and simmer until it reduces by about half.

Pour into a glass jar or add it to a small bowl. Add in the maple syrup, dijon, olive oil, salt and pepper. Shake or whisk until well combined. Taste for seasoning and adjust as needed.

Way to Use Apple Cider Vinaigrette

I have several salad recipes that use this apple cider vinaigrette. This roasted butternut squash salad, harvest quinoa salad, and this roasted butternut squash and brussels sprouts salad.

It would be a great marinade for chicken or served as a light sauce on top of sauteed chicken, pork chops, or pork tenderloin.

You can also toss roasted vegetables in the vinaigrette. Brussels sprouts and any variety of winter squash would be delicious with the vinaigrette.

How long will apple cider vinaigrette keep?

The vinaigrette will keep in an airtight container for 7-8 days. I recommend storing it in a jar with a lid so you can shake it up easily instead of whisking every time you use it.

Ingredients 

  • 1 cup unsweetened apple cider
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons minced shallot
  • 1 tablespoon dijon mustard
  • 1 tablespoon maple syrup
  • 2 tablespoons olive oil
  • Kosher salt and freshly ground black pepper to taste, I use approximately 1/4 teaspoon salt

Instructions 

  • In a small saucepan add the apple cider, apple cider vinegar, and shallots. Bring the mixture to a boil and then lower the heat and simmer. Let it cook for about 10 minutes or until it has reduced by half.
  • Remove from the heat and pour into a jar. Add in the dijon, maple syrup, olive oil, salt and pepper. Put the lid on the jar and shake until well combined.
