Filling
- 4 ounces goat cheese, softened
- 1 1/2 cups broccoli florets, steamed and finely chopped *See note*
- 1/2 teaspoon lemon zest
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon granulated onion
- 1/8 teaspoon red pepper flakes optional
- Kosher salt and fresh ground black pepper to taste
Chicken
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- 1 1/2 teaspoons Italian seasoning
- 1/4 teaspoon granulated garlic
- 1/4 teaspoon granulated onion
- Kosher salt and fresh ground black pepper to taste
- Preheat oven to 400° F. 
- In a small bowl stir together the ingredients for the filling and set aside. 
- Cut a slit in each chicken breast to form a pocket then them stuff with the broccoli goat cheese mixture. In a small bowl combine the spices to season the chicken. Sprinkle evenly over both sides of the chicken breasts. 
- Heat the olive oil in an oven safe skillet over medium-high swirling to coat the bottom of the pan. Cook the chicken 2-3 minutes per side then place the skillet in the oven. Roast the chicken for another 8-12 minutes or until the chicken's internal temperature is 165° F. Let the chicken rest for 5 minutes before serving. 
- If you are using fresh broccoli florets and easy way to steam them is to place them in a microwave safe bowl with a few tablespoons of water. Cover the bowl with plastic wrap and cut a small slit in it. Microwave 2-3 minutes or until the broccoli is tender.
