Last year our winter was hardly a winter at all with almost no snow and mild temperatures. This year we haven’t been as lucky and it feels like it’s snowed nearly every week for the past couple months. 

I’ve been missing using the grill, the cover currently has snow all over it. Even if it didn’t cooking outside when it’s 30 degrees isn’t very fun. Until it warms up cooking inside continues, but I’m jazzing up my usual baked chicken breasts and making this Broccoli Goat Cheese Stuffed Chicken instead!

I was nervous it would be time consuming and end up being a big mess, but turned out to be simple and so delicious. There’s a couple things to remember when you’re making stuffed chicken that will help things go smoothly.

Broccoli Goat Cheese Stuffed ChickenFirst is to buy bigger chicken breasts. You need to have enough room in them to stuff all that creamy broccoli goat cheese filling. It’s a lot easier to cut a slit and make a pocket in a thick breast than it is a dinky one. 

My second tip is to use a meat thermometer to make sure both the chicken and filling are cooked through. The thermometer will ensure that you don’t under or over cook the chicken and will also keep them in tact. If you keep cutting into them with a knife to check for doneness you’re bound to have the cheesy filling oozing out everywhere.

Once stuffed the chicken is seared in a skillet and then the cooking is finished in the oven. I like to serve the chicken with rice and a simple salad, but feel free to customize it with your favorite sides.

Broccoli Goat Cheese Stuffed Chicken

Ingredients 

Filling

  • 4 ounces goat cheese softened
  • 1 1/2 cups broccoli florets steamed and finely chopped *See note*
  • 1/2 teaspoon lemon zest
  • 3/4 teaspoon Italian seasoning salt-free
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon granulated onion
  • 1/8 teaspoon red pepper flakes optional
  • Kosher salt and fresh ground black pepper to taste

Chicken

  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breasts
  • 1 1/2 teaspoons Italian seasoning salt-free
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon granulated onion
  • Kosher salt and fresh ground black pepper to taste

Instructions 

  • Preheat oven to 400° F.
  • In a small bowl stir together the ingredients for the filling and set aside.
  • Cut a slit in each chicken breast to form a pocket then them stuff with the broccoli goat cheese mixture. In a small bowl combine the spices to season the chicken. Sprinkle evenly over both sides of the chicken breasts.
  • Heat the olive oil in an oven safe skillet over medium-high swirling to coat the bottom of the pan. Cook the chicken 2-3 minutes per side then place the skillet in the oven. Roast the chicken for another 8-12 minutes or until the chicken's internal temperature is 165° F. Let the chicken rest for 5 minutes before serving.

Notes

  • If you are using fresh broccoli florets and easy way to steam them is to place them in a microwave safe bowl with a few tablespoons of water. Cover the bowl with plastic wrap and cut a small slit in it. Microwave 2-3 minutes or until the broccoli is tender.
