Caramel Apple Cake

Dry Ingredients
- 1 1/4 cups white whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
Wet Ingredients
- 1 cup unsweetened applesauce
- 1/2 cup maple syrup
- 1/4 cup avocado oil or melted coconut oil
- 1/4 cup plain Greek yogurt 2% or full fat are best
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups diced apple
Toppings
- 1/3 cup salted caramel sauce
- Sea salt for sprinkling on top
Preheat oven to 350° F. Grease and flour an 8x8 baking pan.
In a large mixing bowl whisk together the dry ingredients. In a separate mixing bowl whisk together the wet ingredients. Pour the wet ingredients in with the dry and stir together until just combined. Fold in the diced apple.
Pour the batter into the prepared pan and smooth the top. Bake on the middle rack of the oven for 45-50 minutes or until a toothpick or knife inserted in the middle comes out clean. Let the cake cool in the pan on a wire rack for 15 minutes before removing it. Cool for at least 30 minutes before pouring on the salted caramel sauce and sprinkling with sea salt.
