Carrot Cake Smoothie

Ingredients

  • 1/2 cup chopped carrots, shredded if you don't have a high speed blender
  • 1 frozen banana
  • 1 cup unsweetened almond milk, or milk of choice
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon pecans
  • 1 tablespoon rolled oats oats, gluten-free if needed
  • 1 tablespoon maple syrup
  • 1 tablespoon unsweetened coconut, shredded or flakes
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup ice
  • Raisins coconut and cinnamon for toppings (optional)

Instructions

  • Combine all of the ingredients in the blender and blend until smooth.
  • Pour into two glasses and serve immediately.

Notes

If you don't have a high speed blender I recommend shredding the carrots so that you don't end up with a chunky smoothie.
