Cinnamon Apple Berry Baked Oatmeal

Fresh or frozen mixed berries, shredded apple, sliced almonds and plenty of cinnamon flavor this hearty and healthy baked oatmeal.

Ingredients

  • 1 cup milk of choice
  • 6 oz container plain Greek yogurt
  • 4-5 tablespoons maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 apple shredded
  • 1 cup fresh or frozen berries of choice
  • 1/4 cup sliced almonds

Instructions

  • Preheat oven to 350° F. and spray an 8x8 or similar size baking dish with cooking spray.
  • In a large bowl whisk together the wet ingredients. Add in the oats, baking powder, cinnamon, nutmeg and salt. Stir together and then stir in the shredded apple, berries, and almonds.
  • Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until lightly browned and set. Remove from the oven and let it cool for 10 minutes before serving.
